2 2/3 C all purpose flour
1 t baking soda
1/2 t salt
2 t ground cinnamon
1 1/2 t ground ginger
1/2 t ground nutmeg
1/4 t ground cloves
1 C butter, room temperature
3/4 C dark brown sugar, packed
1 large egg
1/4 C molasses
1 t vanilla
1/4 C white sugar
1/2 t ground cinnamon
Preheat the oven to 350 and line a cookie sheet with parchement.
Whisk together the flour, baking soda, salt, and spices; set aside.
Cream the butter and sugars on medium for 2-3 minutes until well mixed.
Scrape down the bowl and add the egg, molasses, and vanilla. Mix for another 2-3 minutes until thoroughly combined.
Pour in the dry ingredients and mix on low until just combined.
Mix the white sugar and cinnamon for the coating.
Scoop the dough into a ball, roll in the cinnamon sugar coating.
Bake for 13-15 minutes or until the edges are a light golden brown.
After removing them from the oven, you can sprinkle a little more cinnamon sugar on the tops for extra crunch.
Allow them to rest on the baking sheet for a couple of minutes before moving them to a cooling rack.
